I've never bought a USB keyboard before, only the ones that plug right into the keyboard port in the back of the computer. Is the response time affected in any way with the USB instead of the regular keyboard port?

Response time should not be affected. The major difference is that USB is hot-pluggable (unlike PS2 where if you unplug a PS2 keyboard you may require a reboot sometimes to get it working again).
